YAM & EGG WITH PLANTAIN


Ingredients:
Yam, plantain, eggs, vegetable, oil, tomatoes, scotch bonnet pepper, onion, salt, stock cube, cause i wanted ginger & garlic aroma. Read directions after the cut... 


Directions:
Peel & slice yam,
Place pot of water on a medium heat. 
Add your yam and salt for 20 minutes on a medium heat ... check yam if it's soft enough then drain the water and keep aside. 
Chop plantain, sprinkle little salt for taste. 
Place fry pan on a medium heat, add your vegetable oil for a minute to heat a little. 
Pour your plantain and fry .. keep aside fry plantain. 

The egg process:
Chop/roughly blend tomatoes and scotch bonnet pepper and keep aside. 
Chop onion and keep aside. 
Place fry pan on a low heat for a minutes to heat
Add vegetable oil on a low heat. 
Add onion for an half done fry. 
Add tomatoes and pepper then stir. 
Add stock cube and salt. 
Then your ginger and garlic. 
Stir to mix up all the content properly on a medium heat for 10 minutes. 
While waiting for the tomatoes Break your egg and whisk. 
Is your tomatoes sauce dry enough? Then add your egg on a medium heat for 3 minutes and stir to mix up... Leave for 2 more minutes. 
Serve yam & egg with plantain.
