Moimoi made with Pumpkin leaf (Ugu )




INGREDIENTS ● Black eye beans ● Pumpkin leaf (ugu) ● Scotch bonnet pepper ( rodo ) ● Red bell pepper (tatashé) ● Onion ● Corned beef ● Gizzard ● Kotę fish ● Eggs ● Vegetable oil ● Stock cube ● Salt

Preparation:


·         Peel off the skin of the beans by soaking into cold water for 2 minutes then squash to forcefully take off the peel ...
·         Rinse severally and sieve the peel until beans is clean enough.
·         Remove the seeds from red bell pepper then wash with your scotch bonnet pepper.
·         Blend washed beans with onion, red bell pepper & scotch bonnet pepper smoothly.. so smooth.
·         Boil liver, chop into tiny cube shape then fry and keep aside.
·         Boil kote fish with salt and Debone and break into pieces.
·         Boil egg and break off its shell then slice rounds

Cooking directions
Step1- Place pot of about 3 cups of water on a medium heat
Step2 - Add your corned beef, gizzard, slice onion, deboned fish, & ugu then stir to mix properly
Step3 - Add salt & stock cube and stir
Step4 - Add vegetable oil. .. Small quantity and stir
Step5 - Add a cup of water and stir for a mix
Step6 - Put the content into deep bowl, it could be foil paper, nylon.. whichever  is easy for you and in every bowl, foil or nylon add a piece of slice egg then place them gently into your boiling water then cover the pot and leave to simmer for 25 minutes on a medium heat. .... Good luck guyZ.
